- 2 organic eggs
- 3/4 cup egg whites
- 1 cup organic raw spinach
- 4 organic baby portabella mushrooms
- 3 slices of uncured chicken bacon

- Heat coconut oil or butter in a pan.
- Mix eggs and egg whites in a bowl then pour into the heated pan.
- After a few minutes, add spinach, mushrooms, and chicken bacon to the pan and fold omelet in half.
- Finish cooking omelet.
- Serve omelet with Dijon mustard and humus of your choice spread over the top.
