Instructions
  1. Heat coconut oil or butter in a pan.
  2. Mix eggs and egg whites in a bowl then pour into the heated pan.
  3. After a few minutes, add spinach, mushrooms, and chicken bacon to the pan and fold omelet in half.
  4. Finish cooking omelet.
  5. Serve omelet with Dijon mustard and humus of your choice spread over the top.
